Before then it was "Chilean Seabass" which not only has the distinction of being trendy but also has a name designed to make it trendy (because Patagonian toothfish is not fashionable enough). I wrapped them individually in foil, peel on, and baked them at about 350 degrees for about an hour. (these were smallish beets)Then I let them cool and peeled them.
