An Exception for Every Rule

So what's the rule? If you (meaning me) don't post your lunch on the day that you eat it you don't post it at all. The exception? This post. And probably tomorrow's.

Hey, it's my rule, I can break it if I want!



1. peanut butter sandwich
2. plum jam
3. carrots
4. oreos
5. full fat milk

Looks like a pretty normal lunch, no? A veritable American classic I'd say, if not for that jam on the side business. Let me tell you about that. I -needed- PB&J because I'd already decided on the oreos and milk. Self-explanatory, right? So I started my sandwich and only then discovered that I didn't have an appropriate jelly. There was raspberry which of course can only be eaten on toast, and Seville orange marmalade. Uhm, no. What to do?

I know what to do. Grab a couple of plums off the counter and make your own damn jam, that's what to do. Or you could go to the store. But I didn't, I made jam. Felt like Ma Ingalls making-do during a long cold winter out on the prairie! (Except she probably didn't have plums sitting around. Or sugar.) And best off all it was the most delicious plum jam I've ever had the privilege to smear on bread.

Turns out plum jam is really easy to make, just chop up some fruit and cook it for 1/2 of forever with just enough water to cover and a little sugar to make it sweet until it gets sort of goopy, cool it and eat it. (Feel free to steal this recipe)

See? Look at it? Doesn't it just scream sweet/tart wonderfullness?



Of course the reason I was so dead set on my oreo and milk idea was because I made the oreos. That's right, homemade oreos. None of that nasty cake mix business either! I was inspired by @scatteredmom from Chasing Tomatoes who had been inspired by a recipe found on Smitten Kitchen. I wanted a dark, crisp, thin cookie and the third time was the charm. I was -really- happy with the way these turned out. Want a closer look?



I know right? Here's what I did:

Cookie:
1 1/4 cup flour
1/2 cup dark chocolate cocoa
1 cup sugar
1 tsp baking soda
1/2 tsp salt
1/4 tsp baking powder
1 stick softened salted butter
1 egg

Filling:
1/2 stick softened salted butter
1/4 cup vegetable shortening
2 tsp vanilla extract
2 cups powdered sugar

Pre-heat the oven to 375 F.

Stir the flour, cocoa, baking soda, baking powder, salt, and sugar together then with an electric mixer add in the butter and the egg and mix until it makes a ball. Gently knead it a few

times until it turns into something resembling black play dough.

My small cookie scoop was too big for these (and don't even try a press - trust me) so I scooped out 1 teaspoon sized scoops, rolled them into balls and arranged them on a paper lined cookie sheet. I covered the sheet with waxed paper and smashed the balls flat with the bottom of a beer a glass then peeled away the paper. I ended up with 3 trays of 15 cookies each not counting attrition by tasting. I baked these on sheet at a time on the center rack for 11 minutes.

To make the filling just beat the butter and shortening together with the vanilla, add the sugar and mix on low until smooth, then beat a couple of minutes until fluffy.

Match up your halves for size and fill with a generous sploodge of filling (I used a pastry bag) then smash it down with the matching half.

Eat with milk!

Bagel Thins - Not So Bad

Not so bad. How's that for a ringing endorsement? Honestly I'm just not the sort of person that effuses too much about much of anything, much less a packaged bread product. I'll do my best.

But! These Bagel Thins things, not so bad! Not as good as a real bagel, but only like 1/4 the calories too - course that's because you only get like 1/4 the bagel (hence the THINS part). There's no need to be chintzy with the sandwich fixin's. You can pile that baby up and still be able to fit into your pie hole, no problemo.

And! It's the very best part of the bagel, the top, and the bottom. It did occur to me that I could just get regular bagels for about half the price and just cut a thin slice of each side and get pretty much the same thing.

Plus! The middles - I could make croutons. It would be like getting FREE salad accouterments! Then I remembered I'm lazy.

I haven't been feeling well. The plague, clearly. Anyway. He went out to eat with a friend and asked if I wanted him to bring me something. I said that if they had a kid's meal slider on a pretzel bun special to get me one. I know you probably didn't understand that, but he did. And they didn't. But look what he got them to make for me instead! Filet sliders with ooozy havarti on pretzel bread breadsticks. The heart swoons does it not?

I know continuum isn't the right word to use here but dammit people, I am TIRED. And hot. And also a spy. So about that job thing ... yeah. The soul-sucking continues. It's been so bad this week that we are being forced to combine sweet precious lunch time with, well, with work. I know right?!?!?

Today was a proud day though, know why? See that picture? I totally took it on the sly with my phone. What you don't see is that there were other people there, crowded around my desk, eating sad little lunches and talking about stupid boring work and then there was me, surreptitiously snapping away, documenting the Summer of the Sandwich. For you. I did it for you.

I bought a little potato ricer at IKEA the other day that I didn't honestly really think I'd ever use since I have a big crank one somewhere collecting dust. and I saw a whole cryopacked beef tenderloin at the grocery store on sale for 40 bucks, I'd buy it. Then I'd take it home, wrap a kitchen towel around it and carry it around like a baby while incessantly reminding anyone who'd listen that I'd birthed smaller things. Oh. Never mind. That's what I'd do if I saw a whole cryopacked beef tenderloin at the grocery store on sale for 40 bucks.

Then I'd cook it.

And if there were leftovers (and there would be) I'd slice it thin and eat it on dinner rolls with spinach and roasted red peppers and vinaigrette. But I wouldn't call them sliders, cause that irritates Julie.

7 random facts - or at least near-truths - about me.

1. I'm wearing a sweatshirt right now that's older than the Boy.
2. Above mentioned sweatshirt was purchased with a matching pair of buffalo check leggings that I happily wore. In public. A lot.
3. I'm afraid of birds.
4. I hate the sitcom Wings and seriously question whether I can be friends with anyone that feels differently.
5. I've washed the same load of laundry 3 times this week because it doesn't "smell right" but have totally ignored the DOG URINE in the laundry room for the same length of time.
6. I hid 40 bucks 5 years ago and couldn't remember where I put it but I can't forget that I lost 40 bucks.
7. I talk about drinking WAY more than I actually do it.

Just another quickie lunch. But. See that marshmallow? I made that. Sunday. It's the last one (and a half). Who the hell knew? I had no idea it was so easy to make your own marshmallows OR that they would taste so freakin' good. I used Martha Stewart's corn syrup recipe (there's also one that uses egg whites) but only used 2 packets of gelatin because that's all I had on hand. I want to make these again and cut them into ghost shapes. Or maybe pumpkins and roll them in some orange sparkly sugar!

Who needs onigiri when you have bacon? Yeah, that's right, bacon. I don't know what sort of Armageddon this signifies but we had leftover bacon. Something I'd heard about, but never actually seen.

Cubans & Clafoutis

If you Google around you'll find folk's have some pretty strong opinions on what exactly constitutes a Cuban sandwich. As I have no stomach for controversy let's just refer to these delicious sandwiches as Cubanesque, shall we? There's a seeming dearth of Cuban bread out here in the desert by the way, but sweet Hawaiian bread subs in nicely.


Cubanesque Crock Pot Pork

Buy a pork butt that will fit in your crock pot. Salt & pepper it and shove it in the crock. Tuck in a rough chopped onion, a few garlic cloves and pour in a half cup of orange juice. Half 2 Mexican limes (or use 1/2 of a Persian lime) and add the juice. Poke 3 or 4 cloves into one of the lime halves and throw it in as well. Cook on high for about 4-6 hours until the meat is exceedingly tender. Done!


After this pork cooled enough to handle I sliced it thin and made sandwiches on Hawaiian rolls with a little mustard, sliced pickle and Swiss cheese. I very lightly buttered the outside of the bread. I used the two hot skillet method to grill and press the sandwiches until they were toasty and melty and plain overall luscious.

The clafoutis recipe was inspired by Kevin @ Closet Cooking closely following a recipe from Ceres @ Bacchus with only a few minor changes. I must say I'm a little sad that I lived the first 40 years of my life ignorant to the ways of the clafoutis. Never again will neglected fruit languish in my kitchen - clafoutis for all my friends!

Potato Salad - On the Edge

We eat a lot of potato salad - so sometimes I like to mix it up. Get a little crazy. Walk on the wild side. Sometimes I run blindfolded right towards the edge and make Southwestern potato salad. You're probably thinkin' I must be some kind of gourmet chef - and you'd mostly be right. This ain't no amateur hour. Oh, forget it. I'm tired of the charade. Mix up some chili powder, like a tablespoon in about 3 tablespoons of your finest Dijon mustard. Let it hang out there in the bowl while the potatoes cook. Loosen it up with a spoonful of hot potato water then mix it in with your normal potato salad stuff. Boom. Southwestern potato salad. Try it!

In other news I am truly disheartened at the lack of response to my new Justice League sandwich box. I was almost as excited about it as I was about my new "Pink Lemonade" lemon tree. Almost.
