1. chunks of chicken
2. saffron rice
3. zucchini with tomatoes and caramelized red onion
4. pita chips and roasted red pepper hummus

However you spell it (or say it) chicken shawarma is dang good eatin'. This lunch was made from leftovers from the previous night's dinner. Gotta love those leftovers! I used a spice mix from a local restaurant/grocery called Haji Baba. It's definitely better when they make it but we still managed to choke it down. I drizzled a tiny bit of pomegranate molasses on the top of mine for a little change o' pace.

This looks delicious! Love the zucchini and red onions! Now I have another thing to do with all the zucchini that we are growing (4 yr old planted all the seeds in the package!) Did you roast the zucchini or saute it?

The squash is sauteed - basically carmelize onions, add zuchinni and cook until mostly tender, add tomatoes and season with salt and pepper. It LOOKS prettier when it's first made, but still tastes good the next day after the colors fade

I dream of food like this. Last time we were in Europe we spent every day (at least that's what it seemed like) searching for the best middle eastern street food we could find.
