Daring Baker Challenge #2 - Lemon Meringue Pie

Jen, the Canadian Baker, challenged the Daring Bakers to focus our collective fierceness this month on the unassuming Lemon Meringue Pie. Today we celebrate the victories...and the defeats.

Mine turned out pretty good actually. Not that I could prove it with the pictures. Probably couldn't have traded my soul for a clear shot that day. Not that it really matters, cause the pies were tiny and cute - not to mention freakin' delicious.



I do love me some lemon. And pie.



I ate 4!



The crust was almost sugar-cookieish. Yes. That's a word.

awww your pies are ADORABLE!!! congratulations on a challenge well done, I understand about the pictures.. sometimes yummy foods just don't want to look pretty for the camera..

I love this site and am adding it to my feed reader! Your tarts are just darling and such a perfect size for your bento box.

I got a good laugh at the comment you left on my blog, coffee almost came out of my nose. A little swearing and twitching make life just that much more interesting. :-)

I totally agree with the sugar cookie-ish crust--it helps cut the lemon, and is just fun to eat!

Not only are these tartlettes adorable and yummy, but they look so cute in the bento box you posted after. Perhaps not super healthy, but with the blueberries on a stick a super flavor combo.
