Just Like Bagels and Lox - Sorta

Penance for yesterday's excess.

1. bagel sandwich with kamaboko and a little cream cheese
2. yellow star onigiri
3. grape tomatoes on a pick with tiny mozarella balls
4. yellow pepper filled with hummus
5. potato salad
6. heart shaped peanut thing that I can't remember the name of
7. couple of grapes

Japanese-ish Style Potato Salad

1 pound of potatoes diced
1 trimmed and peeled carrot
2 T snipped chives
1/4 - 1/3 c mayo
salt and pepper

Boil potatoes along with the carrot in salted water until the potatoes are tender. The carrot will be less but that's fine. Drain into a colander and let them cool. Pluck out the carrot and dump the potatoes into a bowl. Grate the carrot over the potatoes, then stir in mayo until you like the consistency. Sprinkle in the chives and season to taste.

Makes about 6 servings.

Variations:
cucumber: thinly slice 1/2 of a seeded cucumber, salt lightly and let rest for 1/2 hour or so, squeeze out the excess liquid and add with the grated carrot
egg: add one finely chopped or sieved egg
onion: instead of the chives substitute a finely chopped green onion or an equivalent amount of white onion treated in the same way described for the cucumber
